Low Carb Moist Chocolate Cake Recipe (4 Servings)
Ingredients:
- 1 cup oat bran
- 1 cup water (and/or low fat milk)
- 1-2 tablespoons raw cocoa
- 2-3 tablespoons coconut flakes
- 1 cup whey protein (chocolate or unflavored)
- 4 egg whites (or 2 whole eggs)
- Vanilla extract
- Stevia (or other sweetener)
- Baking soda
- 1-2 chocolate chips or 1/2 chocolate protein bar cut into small pieces
- 4-5 walnuts
- Butternut squash/banana (optional)
- Raisins or cranberries (optional)
- Cottage cheese (optional)
- Nutmeg (optional)
Directions:
Mix everything in a blender. Pour the mixture into a baking tray greased with a little oil. Add coconut flakes, oats, walnuts, and chocolate chips (or a protein bar cut into pieces) on top. Bake for 25-30 minutes. Serve it warm or leave it in the fridge to enjoy it later. Either way, it’s simply delicious.
For extra flavor, add raisins, butternut squash cut into pieces, or a banana to the mixture. However, fruits will increase its carb content. Use cottage cheese to obtain a moist texture. To cut calories even further, simply skip the nuts.
