Low Carb Pancakes: My Favorite Treat Without the Guilt

It took me years to find a delicious low carb dessert for any moment of the day. After trying dozens of recipes, I’ve discovered a fantastic combination! All you need are egg whites, psyllium husk, stevia, and cinnamon. For extra flavor, add bananas, apples, and/or walnuts or flax seeds. To make it more fluffy, use baking powder. Depending on how many eggs you’re using, you’ll get a huge pancake or two medium pancakes that will leave you full and happy.

Delicious Low Carb Pancakes

Ingredients: "egg white pancakes"

  • 5-6 egg whites
  • 2 tablespoons psyllium husk
  • Stevia (to taste)
  • 1 apple or banana
  • Walnuts or flax seeds
  • A pinch of baking powder
  • Cinnamon

Directions:

In a blender, mix egg whites, stevia, apples, and baking powder. Add the mixture to a non-stick pan. Sprinkle some walnuts or flax seeds over it. Flip it on the other side after 3-4 minutes. Place it on a large plate, add stevia and cinnamon all over it, and serve it warm.

These low carb pancakes are simply irresistible. The taste of baked apple, cinnamon, and walnuts will tantalize your senses. Personally, I eat this for dinner or anytime I have sugar cravings. The servings are huge, making it ideal for those with a big appetite. If you’re really hungry, use flax meal or oat flour instead of psyllium. However, keep in mind that oat flour will slightly increase the carb content.  

How to Make No Carb Pancakes:

If you choose not to use fruit, simply mix the egg whites with psyllium, cinnamon, and stevia. This way you’ll get pure protein with zero carbs. You can also add protein powder for extra flavor. 

I recommend psyllium because it’s a great source of fiber and has virtually no carbs. It also gives pancakes a rich texture, making them more filling.
